Gluten free turkey meatballs: Combine 1 lb ground turkey, 1 tablespoon of oregano and fennel seed, fresh parsley, 2 grated cloves of garlic, 1 large eggs, and 1/2 cup of GF breadcrumbs. Bake at 425°F for 20 min (turning once halfway).
Frittata: Sauté a handful of veggies on stove on medium heat. Whisk 6 eggs with 1/4 cup milk (I used oat), a handful of cheese, salt, and pepper. Pour egg mixture over veggies and cook until edges are set. Finish in oven for 10 min at 400°F.
GF Chicken cutlets: Preheat oven to 425°F. Dry off thinly sliced chicken breast and pound until even. Whisk one egg with a splash of water in a deep bowl. Coat chicken with a thin layer of cornstarch before dunking in egg mixture and seasoned breadcrumbs. Shake off excess. Bake on oiled baking sheet for 20-25 min. Turning once halfway.
