看似家常的猪肉丸子豆腐番茄汤,却藏着不少讲究——从肉馅的选择、葱姜水的比例、淀粉的用量,到胡椒的使用,每一步都决定着丸子是否嫩滑多汁、汤底是否鲜美。
Ingredients:
Meatball 肉丸
1000g Ground Pork 猪肉馅
1 Tbsp Cooking Wine 料酒
2 Tbsp Dark Soy Sauce 老抽
1 Tbsp Sesame Oil 香油
1/4 tsp White Pepper 白胡椒粉
1 tsp Sugar 糖
Salt 盐
80g Scallion and ginger water 葱姜水
100-140g Ice Water 冰水
2 Tbsp Corn Starch 玉米淀粉
Soup 汤底
1 box of Soft Tofu 豆腐
2 medium-sized tomatoes 番茄
5 cloves of garlic 蒜
2 Tbsp Tomato Paste 番茄酱
1 Tbsp Soy Sauce 酱油
1 tsp Sugar 糖
Cooking oil 食用油
Salt 盐
Water 水
