G2G Bar Refrigerated Protein Bars

INGREDIENTS:
-1 cup of thick, high-protein yoghurt
-1 cup of cottage cheese (I use 2% but anything should work)
-1/4 cup of tapioca flour or corn flour
-1/4 cup maple syrup
-2 medium eggs
-1-2 large handfuls of raspberries (frozen or fresh)
-OPTIONAL: 1/2 teaspoon of vanilla extract
METHOD:
1. Preheat oven to 160 °C / 320 °F.
2. Place all ingredients except raspberries in a blender and blend until smooth.
3. Line a loaf pan with a baking sheet and pour in the batter. Top with raspberries.
4. Bake for 45–55 minutes, until the top is firm and the centre is mostly set but still slightly moist.
5. Cool in the fridge for at least 6 hours or overnight.
6. Serve cold; optionally, top with a dollop of whipped cream & side of raspberry jam.
