3 tablespoons (45ml) olive oil
1 pound (454g) cremini mushrooms sliced
1 medium onion - diced
5 cloves garlic - minced
5 tablespoons (70g) unsalted butter
1/3 cup (45g) all-purpose flour
1/2 cup (120ml) dry white wine
4 cups (960ml) low-sodium chicken stock
1 1/2 cups (360ml) heavy cream
1/2 cup (120ml) reserved pasta water
1 1/2 cups (170g) shredded mozzarella - divided
1/2 cup (45g) grated parmesan cheese
salt and pepper to taste
1/4 cup minced flat-leaf Italian parsley
3/4 cup (40g) panko breadcrumbs - optional
