This is the real recipe — not a reverse-engineered version, not a guess — but the actual specs served at the bar.
What I love about this cocktail is the intention behind it.
It keeps the DNA of a classic Sazerac, but completely rethinks its least present ingredient.
Absinthe, usually just a rinse, becomes the star as an absinthe air — not for theatrics, but for a purpose: staying present on the nose from the first sip to the last.
Is it “easy”? Not exactly.
Is it achievable at home with a bit of dedication and a few specific tools? Absolutely.
This is a wonderful cocktail — proof that world-class drinks aren’t about complexity, but about intention.

Saz-air-ak — Origin Bar (Singapore)
Ingredients
50 ml rye whiskey (Origin uses Michter’s)
7.5 ml Merlet Crème de pêches
5 ml lemon oleo saccharum
4 Peychaud’s Bitters
Absinthe air (see below)
Lemon Oleo Saccharum
100 g lemon zest (organic, wax-free)
100 g sugar
25 ml water (for rinsing)
Yield: about 110 ml, enough for a little over 20 cocktails — the same number you can top with the absinthe air batch.
Method:
Combine the zest and sugar in a sous-vide bag.
Seal and leave at room temperature until the sugar fully dissolves (about 48 hours).
Strain, rinse the zest with 25 ml water, add it to the syrup, mix, and bottle.
Absinthe Air:
50 ml bohemian-style absinthe
115 ml water
0.5 g sucrose fatty acid ester (E473 / SUCRO)
Yield: enough for about 20 cocktails.
Method:
Blend all ingredients.
Place an aquarium pump in the liquid and let it generate air.
If not used the same day, the liquid can be stored in the fridge and reused the next day.
