To make this, you'll need:
1-2 lb. mini cucumbers
green onion
ginger root
garlic cloves
salt
rice wine vinegar

stevia (I use liquid pure stevia leaf extract):* https://amzn.to/4sr9RQh
Wash and thinly slice cucumbers. Cover generously with salt, massage, and set aside to brine for ~90 min. Using a colander, rinse cucumbers thoroughly under cold water to remove brine; gently squeeze the excess liquid from the cucumbers. Season to taste and chill before consuming. (You can eat it fresh, but it's best after chilling for a couple of hours or overnight!) I hope you try this out! If you make this, it won't last long; so delicious!
