Peel and grate the garlic and the ginger. Slice the turkey breast into pieces. In a glass, combine soy sauce, gochujang, honey, lime juice, and cream cheese and mix well. Add 4 g of oil to a pan over medium heat and stir-fry the onions and pak choi with a pinch of salt for 3 minutes. Meanwhile, heat a pot with salted water. As soon as it starts to boil, add the udon noodles and cook them for 3 minutes. Give them a gentle shake, then drain the water and let the noodles sit in the sink for a moment. Push the vegetables to the side of the pan, add another 2 g of oil, and stir-fry the turkey with a pinch of salt and black pepper for 1 minute on each side. Push the meat to the side, add another gram of oil, and then add the ginger and the garlic. Let it fry for 20 seconds. Give everything a good stir. Add the cooked noodles and the sauce and mix for 30 seconds until combined. Done! Add an optional half sliced avocado at the end.
