In today’s video, I’m showing you how to make my delicious homemade gorditas step by step — from mixing and kneading the masa to cooking them until they’re perfectly golden, then filling them with a rich and flavorful ground beef and chorizo mixture. These gorditas are slightly crispy on the outside, soft and tender on the inside, and absolutely loaded with flavor in every bite. One of the things I love most about gorditas is how versatile they are. You can fill them with just about anything you like — beans, cheese, shredded chicken, carnitas, or even breakfast fillings — but today I’m sharing one of our favorite combinations. The seasoned ground beef and chorizo come together with onions, spices, and a little boost of flavor that makes every bite so satisfying. Then we finish them off with all the trimmings like crema, queso fresco, lettuce, tomatoes, cilantro, avocado and a good everyday salsa. I also show you little tips along the way — how the masa should feel, how to press them, and how to know when they’re perfectly cooked so you get that beautiful texture every time. And of course, my Ron made it home from golfing just in time to enjoy these, and he was more than ready for his plate!
