Ingredients
1 lb breakfast sausage
6 large eggs
8 corn tortillas
1 cup shredded Colby Jack cheese
1–2 tbsp cooking oil
Salt, to taste
Fresh cracked black pepper, to taste
Pickled jalapeños, for serving
Hot salsa (optional)
Directions
1. Set your griddle to low heat and allow it to preheat for about 5 minutes.
2. Place the sausage on the griddle. Break it apart and press it slightly into the surface to encourage browning. Cook until fully browned and cooked through.
3. In a bowl, crack the eggs and add a small pinch of salt. Whisk until well combined.
4. If the griddle looks dry, add a small drizzle of oil. Pour the eggs over the cooked sausage and gently fold together. Cook on low heat, stirring occasionally, until the eggs are just set.
5. Sprinkle the shredded cheese over the mixture and fold until melted and evenly combined.
6. Lightly oil a clean section of the griddle. Warm the tortillas until soft and pliable, with light brown spots.
7. Fill each tortilla with the sausage, egg, and cheese mixture. Top with pickled jalapeños and hot salsa, if desired.
