Ingredients
420g (14.8oz) nian gao (Chinese New Year cake), sliced into 1cm-thick pieces
For the batter
50g (1.8oz) plain flour (all-purpose flour)
25g (0.9oz) cornflour (cornstarch)
25g (0.9oz) rice flour
⅓ tsp salt
¼ tsp bicarbonate of soda (baking soda)
110–120ml (3.9–4.2fl oz) water, as required (to achieve a yoghurt-like consistency)
1 tbsp cooking oil (or other neutral cooking oil)
