Serves 5-6
For blanching the chicken
1.2kg (2.5 lb) whole chicken, jointed into small pieces
4–5 slices of young ginger
For the soup
2.5L (approx. 2.6 quarts) water
4 pieces Codonopsis root (Dangshen)
15g (0.5 oz) Angelica sinensis (Danggui)
2 seedless dried red dates (Jujubes)
30g (1.1 oz) Solomon’s seal (Yu Zhu)
1 chicken stock cube (Note: if using 1kg (35.3 oz) of chicken feet instead, the stock cube is not required)
800g (28.2 oz) daikon radish, cut into chunks
2 tsp salt, or to taste
Some goji berries (Wolfberries)
