GINGER | अदरक 1/2 INCH CURD | दही 1 TBSP TURMERIC POWDER | हल्दी पाउडर 1/4 TSP KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1/4 TSP SALT | नमक TO TASTE CUMIN SEEDS | जीरा A PINCH WATER | पानी 1/4 CUP + 2 TBSP Vegetable & Paneer Filling CABBAGE | पत्ता गोभी 1/3 SMALL SIZED CARROT | गाजर 1/2 MEDIUM SIZED CAPSICUM | शिमला मिर्च 1/2 MEDIUM SIZED PANEER | पनीर 150 GRAMS (GRATED) Cooking GHEE | घी AS REQUIRED SALT | नमक A PINCH BLACK PEPPER | काली मिर्च TO TASTE (FRESHLY CRUSHED) FRESH CORIANDER | हरा धनिया A SMALL HANDFUL (CHOPPED) Method: To make the instant batter, add besan, rawa, green chilli, ginger, curd, turmeric powder, kashmiri red chilli powder, salt, cumin seeds, and water into a mixer jar. Blend everything into a smooth batter. It shouldn’t take more than a few seconds to make the batter smooth. Cover it and let it rest just until you prepare the filling. Roughly cut the cabbage. Peel the carrot and cut it roughly. Remove the core of the capsicum and cut it roughly as well. Add all the vegetables to a chopper and chop them finely. It takes just a few seconds and the vegetables get nicely chopped. Transfer them to a bowl. Add grated paneer and mix everything together. The filling is now ready. Now place a dosa tawa on the gas and heat it on high flame. Here is how you can check the perfect temperature: sprinkle a little water on the tawa. The water should sizzle and evaporate immediately. Once the tawa is hot, reduce the flame to low. By now, the batter would have rested. The consistency should be similar to dosa batter. You can make this in two ways. To make the plain version, pour a ladle of batter on the tawa and spread it evenly just like dosa. If making a plain cheela, spread it slightly bigger so it becomes more filling. Drizzle some ghee and cook it on low flame for 2–3 minutes. Once the base becomes crisp, gently loosen it with a spatula and fold it. The plain besan dosa is ready. For the vegetable version, pour a ladle of batter and spread it like dosa again. Immediately add the prepared vegetable paneer filling over it and press it lightly. Drizzle melted ghee over it. Sprinkle a pinch of salt, freshly crushed black pepper, and chopped fresh coriander. Using the spatula, press the topping gently so it sticks to the cheela. Cook it on low flame for 2–3 minutes so the base becomes crisp. Carefully flip the cheela and press it again. Let the vegetables cook on low flame for another 2–3 minutes. Once everything is nicely cooked and you see even browning, fold the cheela. Our healthy, instant and tasty Besan Vegetable Paneer Cheela is ready.
