Blackberry Wine Cake 1 box butter cake mix 1 box (3.4 ounces) instant vanilla pudding 4 eggs 1/2 cup oil 1 cup blackberry wine 1/2 cup chopped pecans GLAZE: 1/2 cup butter 1 cup sugar 1/2 cup blackberry wine Preheat oven to 350°. Spray a Bundt cake pan with nonstick cooking spray. Sprinkle chopped pecans in the pan and set aside. Combine the cake mix and pudding, breaking up any lumps in the cake mix. Add the eggs, oil, and one cup of blackberry wine. Mix at medium speed for about four minutes until the batter is completely smooth. Pour the cake batter into the Bundt pan and bake for 45 to 55 minutes or until the cake tests done. About 10 minutes before the cake is done, prepare the glaze. Melt the butter in a small saucepan and then add the sugar and 1/2 cup wine. Bring to a boil. Reduce heat and simmer for about three minutes. Slowly pour the glaze over the cake, making sure to let it run down the sides to completely cover the cake. Allow it to sit for about 10 minutes after all the glaze has been poured over the cake and then turn out onto a plate. NOTE: This is delicious with cream cheese frosting, if desired.
