Over three days in Calabria, Eva’s dad (“Papa Turi”) taught me how his family has made traditional spicy Calabrian salami for generations. This video documents the full process as it’s still done in small villages today, from cutting and seasoning the meat to stuffing and hanging the finished salami.
This is not a modern how-to guide, and it’s not something we recommend trying at home. Instead, it’s a record of a tradition that’s slowly disappearing — one that relies on experience, instinct, and knowledge passed down over decades.
There’s an incredible amount of chili involved, a few moments where we struggled to breathe, and the kind of intensity that only comes from doing something the old way. More than anything, this video is about preserving a piece of Calabrian food culture while it’s still being practiced.
