Separate the eggs into two bowls (whites in one, yolks in another). Add cottage cheese to the egg yolks. Blend or whisk until smooth. Whip the egg whites Add cream of tartar to the egg whites. Beat with a mixer until stiff peaks form. Fold together gently Slowly fold the yolk mixture into the egg whites. Do not overmix or it will lose the fluffy texture. Form the bread rounds Spoon the mixture into 6–8 small rounds on the baking sheet. Bake for 25–30 minutes until golden.
