sweet potato bowl recipe
1. preheat oven to 400F. Chop 1 white sweet potato in cubes, then toss them in a bit of olive oil and cinnamon. (cinnamon is KEY)
2. Chop 1 Zucchini, and toss in olive oil, salt, pepper
3. Put the sweet potato in oven for 15 minutes. Then, Add the zucchini for an additional 15 minutes (flipping halfway)
4. Cube chicken breast and coat in a bit of olive oil, salt, and any desired seasonings. Cook your chicken how you prefer (I use the airfryer at 375F for roughly 8-10 min)
5. Cook quinoa on stove.
6. Chop cherry tomatos and an avocado.
7. Assemble your bowl with your cooked sweet potatoes, zucchini, chicken, quinoa. Add your chopped tomatos, on top as well as baby spinach. Garnish with taziki.
